4 eggs
2 C sugar
3 C flour, sifted
2 t baking powder
1 1/2 t baking soda
1/2 t salt
2 t cinnamon
2 C carrots, shredded

Directions:
Directions:
Heat oven to 350*. Beat eggs, add sugar and beat until thick. Add oil gradually, beat until thoroughly combined. Stir in flour, baking powder, baking soda, salt, and cinnamon till smooth. Stir in carrots. Bake in 2 well greased 5x9 loaf pans for 1 hour. Or use 4 1 lb cans filling no more than 2/3 full and bake 45 minutes or until taster comes out clean.
(If using small cans, such as soup cans, fill no more than half full.)
Variation: use 1/2 white flour and 1/2 whole wheat flour for a nuttier flavor
