2 1/2 lb. ground beef; lean, good quality
1 lb. Bob Evans hot sausage
1 1/2 c. heavy cream (not whipping cream)
1 1/2 c. whole milk
6 T. onions, finely chopped
1 T. salt
1/2 tsp. pepper
1/2 tsp. allspice
1 1/2 c. seasoned dry bread crumbs
6 eggs yolks only, slightly beaten

In a large bowl, mix meats together using hands. Add whole milk and cream. Shake the spices and onions over the top and mix well. Add egg yolks and mix. Finally add bread crumbs. Refrigerate for several hours while the mixture sets. Form meatballs into walnut sized rounds using a mini-ice cream scoop and wet hands.

Place on cookie sheet and broil, turning several times for even browning. Meatballs can be frozen at this point. Place into oven safe kettle and bake at 350º for an hour. Meatballs should cook in their own juices, but if they appear dry, add 1 - 2 cups beef broth.
