3 lbs. ground chicken
1/2 small onion
1 tsp. chicken base
2 Tbsp. parsley
2 bags saltine crackers, crushed
5 chicken bullion cubes
2 eggs
salt and pepper

Directions:
Directions:
Place ground chicken in a large bowl. Break crackers until fine crumbs; then add to bowl. Chop onion fine and add to mixture. Melt chicken base in small amount of water in the microwave. Add to bowl. Crumble up bullion cubes and add along with the parsley and eggs. Mix all ingredients well with hands. Make sure everything is well mixed. Roll chicken into 2-3 inch balls. Place on waxed paper and spread with hands until about 1/4 inch thick. Place 2 Tbsp. butter in skillet and melt. Add chicken patties and fry on medium heat until browned on both sides.

These patties may be frozen if you don't need to use them all at once. If you don't have chicken base, you may substitute poultry seasoning. It doesn't take much -- be careful because poultry seasoning contains a lot of sage! If you have a favorite kind of chicken seasoning you may substitute with that, too. BUT only substitute for the chicken base -- you'll still need to use the bullion cubes!
