1 2-3 lb chicken, cut up
2 tablespoons seasoning salt
2 tablespoons red pepper
2 cups lard or vegetable oil
1 1/2 teaspoons garlic powder
1 tablespoon black pepper
1 cup all purpose flour

Wash and cut chicken into pieces. Cover with buttermilk or regular milk. Marinate for one hour or longer. Drain chicken pieces and shake off excess milk. Mix garlic powder, seasoning salt, black pepper, and red pepper. Sprinkle chicken pieces with seasoning to coat them evenly. Put flour in plastic bag, add any remaining seasonings to flour bag. Add chicken pieces a few at a time. Shake gently to coat pieces. Transfer chicken pieces to a wire cooling rack, placing them apart. Let stand 30 minutes. Heat oil in heavy skillet over medium heat until it reaches a temperature of 350 degrees. Add chicken pieces a few at a time. Cover and cook 10-12 minutes, or until golden brown on one side; turn the pieces, reduce heat. Continue cooking covered until evenly browned on both sides. Remove pieces to a cooling rack to drain.
