5 medium baking potatoes
1/4 C plus 1 tsp butter
2 T plus 1 1/2 tsp milk
1/2 tsp salt
9 oz cream cheese
1/4 C plus 1 T sour cream
Paprika to garnish

Directions:
Directions:
Pierce potatoes and bake at 375º F for 1 hour or until tender. Cool. Cut a thin slice off the top of each potato. Scoop out the pulp and place in a mixing bowl. Add butter, milk and salt; beat until fluffy. Beat in cream cheese and sour cream. Spoon into potato shells. Sprinkle with paprika. Place on a baking sheet. Bake uncovered ant 350º F for 20 - 25 mins or until heated through and tops are golden brown.

I like them really cheesy and so I add some shredded mexi blend cheese from costco to the mix and put more on top.
