3 oz. liquid smoke
6 lbs. trimmed beef brisket
Meat tenderizer
Celery Salt
Onion Salt
Garlic Salt
Salt
Pepper
Worchestershire Sauce
Commercial Barbecue Sauce

Directions:
Directions:
Pour 3 oz. liquid smoke over brisket in baking dish. Sprinkle generously (on both sides) with tenderizer, celery salt, onion salt, garlic salt. Cover with foil and refrigerate overnight, basting occasionally with liquid. Drain liquid from meat. Sprinkle both sides with salt, pepper, Worchestershire sauce. Cover meat with new foil over top and under sides of pan. Bake 5 hours at 275º. Uncover carefully, pour commercial barbecue sauce over top, recover and bake for one more hour. Remove meat and allow to cool ( 1 hour or refrigerate and slice later). Cool sauce and remove fat. Add 2 T. flour dissolved in 1/2 cup water and heat to thicken. Reheat meat and serve meat and sauce hot.
