2 Tbsp. margarine
1 1/2 c. pumpkin (15 oz. can)

2 eggs

2 Tbsp. flour
1/2 c. sugar
1/2 c. brown sugar, packed
1/2 tsp. salt

1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. mace
1/2 tsp. cloves
(or 1 3/4 tsp. pumpkin pie spice)

1 c. milk

Line a 9-inch pie pan with pastry and keep cool in refrigerator. Preheat oven to 350º.

Melt margarine and stir into pumpkin along with spices.

In a separate bowl beat eggs until light and frothy. Stir flour, both sugars, salt, and milk into beaten eggs; then mix egg mixture and pumpkin mixture together with a gentle hand or low speed mixer.

Pour filling into unbaked pie shell and bake an hour longer or until knife inserted near center comes out clean.


I always insist that we have this at Thanksgiving, no matter how stuffed we are from dinner.
