CRUST:
1-1/2 cups all-purpose flour (divided)
1/2 TSR. salt
3 Tbsp. cold water (mix with 1/4 c. of the flour to make a paste
Mix 1/2 c. Crisco shortening into sifted flour & salt
Add paste to flour mixture then gently knead together.
FILLING:
1/2 C. packed brown sugar
2 Tbsp. cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/8 tsp. salt
Dash ground nutmeg
6 cups thinly sliced peeled pears
1 Tbsp. lemon juice
TOPPING:
2/3 c. all-purpose flour
1/3 c. packed brown sugar
1/3 c. cold butter or margarine

Directions:
Prepare crust per above method, then roll out dough to fit a 9-in. pie pan. Flute edges.
Combine filling ingredients; spoon into crust. Bake at 400 degrees for 25 minutes. For topping, combine flour and brown sugar; cut in butter until crumbly. Sprinkle over filling. Bake 40 minutes longer. Cover edges with foil during the last 15 minutes to prevent over browning if necessary.

A little secret for fruit double crust pies or Quiche:
brush pie crust with the white of 1 egg (beaten) then sprinkle 2 Tbsp. flour over it and leave it while mixing the filling...this keeps the bottom crust from getting soggy.
