1 112 Lb Banana Squash diced
1 apple diced (not Macintosh)
1 oz ginger peeled and grated
32 oz chicken stock
1/2 onion finely chopped
4 oz heavy cream
2 oz butter
salt and pepper to taste
Garnish with fresh basil and parsley

Directions:
Directions:
Saute onion, apple and squash in butter. season with salt and pepper. Add ginger and saute until tender. add stock. Bring to boil and simmer for @ 45 mins. add cream and puree entire mixture. Bring back to boil. garnish and serve.
