1-2 zucchinis, pared and sliced
2-3 garden fresh tomatoes, sliced
3 TB flour
1 large onion, sliced
1 large green pepper, diced
2 cups shredded mozzarella cheese
Salt and pepper to taste
1/2 cup butter
Parmesan Cheese

Directions:
Directions:
Grease a 9X13 baking dish. Layer the zucchini and tomatoes and sprinkle with the flour and salt and pepper. Then layer the onion, green pepper and cheese. Cut-up 1/2 cup butter and dot the top of the casserole. Sprinkle the cheese on top. Cover and bake at a 350º oven for 45 minutes. The last 5 minutes, remove the foil and sprinkle with Parmesan cheese and bake uncovered until brown and bubbly.
Serves about 6.
