Ingredients:  
1-2 lb chuck roast, cooked until tender and put through a meat grinder.
Use 2 cups of ground meat and mix with White Sauce, 1 cup.
3 TB butter
1/3 cup flour
1 cup milk
Mix the 2 cups of ground meat with the white sauce.
Then, add:
1/4 cup uncooked Minute Rice
1 tsp Worcestershire Sauce
1 TB minced onion
Salt and pepper to taste
Dash of paprika
Dash of parsley flakes

Directions:

Mix together thoroughly and allow to chill completely. Shape into cones and roll in cracker crumbs, then in a dish with one beaten egg, and then crumbs again.
Fry in deep fat, or chill and fry later.
One recipe with a 1-2 lb. chuck roast makes about 90 croquettes.

We Jones kids all love this recipe! We can each remember Mom making the meat mixture and then shaping the croquettes. Then she fried them and they were delicious!
