2 5 oz. cans of chunk chicken
1 medium onion, diced
1 green pepper, diced
1 cup celery, diced
3 TB oil
1/2 tsp salt
2 TB soy sauce
1 large can pineapple chunks with juice
1/2 cup water
1 small can bamboo shoots, drained
2 TB cornstarch

Saute onion, green pepper, celery in oil. Add chicken, salt, soy sauce, pineapple and water. Blend cornstarch with liquid from bamboo shoots. Stir in chicken mixture.
Cook until thick. Add the bamboo shoots and heat through.
Serve over cooked rice or crisp noodles.

Serves about 6
