4 Tilapia fillets, thawed (or fresh)
1 sweet Vidalia type onion, cut in slices, separate rings
8 cups fresh spinach
2 ripe tomatoes, coarsely chopped
Handful of fresh basil, chopped
1 T. Butter or margarine
Olive oil
Coarse salt and freshly ground black pepper

Directions:

Heat a heavy skillet on high, and add butter, and as it melts add about the same amount of olive oil. (you can use more butter and olive oil if you like). Reduce heat to medium and saute onion rings.

Remove onions to a plate, saute tilapia fillets, just a few minutes on each side. Remove cooked fish to plate with onions.

Wash spinach, and put in skillet. You want to just barely wilt this, don't cook it all the way down.

Remove spinach to a medium sized platter (it's really pretty on my white earthenware one) and put fresh chopped tomatoes in skillet to just warm through.

Arrange cooked onions and fish on top of wilted spinach, sprinkle warmed tomatoes on top and finally add chopped fresh basil.

Salt and pepper to taste. Serve immediately, family style.

You can use any fish, but tilapia is really quick cooking and goes well with the other flavors in this dish.
