SWEET POTATO MIXTURE
3 c. cooked sweet potatoes, mashed
1/4 c, butter or margarine
3/4 c. sugar
3 eggs, slightly beaten
1/2 c. evaporated milk
1 (8-oz) can crushed pineapple, drained
1 tsp. vanilla extract

TOPPING
1 c. light brown sugar
1/4 c, butter or margarine
1/2 c, self-rising flour
1 c. chopped pecans

Directions:
Directions:
Combine ingredients for Sweet Potato Mixture in order listed. Pour into a buttered 2-qt.casserole
dish.

For Topping:
Mix brown sugar and flour. Add in butter or margarine and use fork to make mixture crumbly.
Add pecans that have been lightly sprinkled with
flour. Sprinkle topping over sweet potato mixture.
Bake at 350 degrees for 15-20 minutes or until top is light brown.
