1 (26 oz) jar marinara sauce, divided
1 tsp. olive oil
1 cup finely chopped onion
1/2 cup red bell pepper, chopped
1 cup meatless fat-free sausage, crumbled
1 cup mushrooms,chopped
1/2 cup zucchini, chopped
2 garlic cloves, minced
1 (16 oz.) tube of polenta, cut into 18 slices
1/2 cup (2 oz.) shredded part-skim mozzarella cheese

Spoon 1/2 cup of the marinara sauce into an 8 inch square baking dish & spread over the bottom of the pan.
Heat oil in a large nonstick skillet over medium-high heat. Add onion & bell pepper; saute for 4 min. or until tender. Stir in sausage; cook 2 min. Add mushrooms, zucchini, and garlic; saute for 2
min., stirring frequently. Add remaining marinara sauce. Reduce heat and simmer for 10 min.

Arrange 9 polenta slices over marinara sauce in baking dish; top with half of veg. mixture. Sprinkle 1/4 cup of cheese; arrange remaining polenta, then veg. mixture and last 1/4 cup cheese.
Cover and bake at 350 for 30 min. Uncover and bake 15 min. longer until bubbly.
