1 lb. dried red beans
1 lb. smoked sausage mild
1 smoked ham hock
1 medium onion chopped fine
1 package onion soup mix
2 bay leaves
1 tsp. slice jalapeno pepper
1 pod garlic, chopped fine
3 dashes hot sauce ( such as Tabasco)

Directions:
Directions:
Wash and drain beans. Place all ingredients in crock pot and cook on high for 3 hours. Reduce heat and add enough water to cover ingredients. Cook for 3 to 4 more hours. Add salt to taste one hour before serving.

Serve over rice.
