4-6 medium-sized walleye filets
1/2 stick of butter
2 eggs and a little water or milk
3/4 cup potato buds
2 T. flour
Season Salt

Directions:
Directions:
Whisk the eggs and water or milk together. Mix potato buds and flour in a medium flat bowl.

Add the butter to skillet. Dip fish in egg mixture and then in potato bud mixture. Put in medium hot skillet and lightly add any type of season salt. Fry until medium brown on both sides and fish flakes.

I like to add Potlach Seasoning (Salmon & Seafood Spice Rub) to most any fish or seafood. You can buy it at Williams-Sonoma.
