Ingredients:  
1/2 stick of butter or margarine
2 Tbsp. flour
1 Can peas and onions
1 large can mushrooms
1 large jar pimientos
1 can small whole Irish potatoes, cut large pieces
1 1/2 C shredded cheese

Directions:
Directions:
Melt butter; add flour and stir until smooth.
Add the juices from the cans of peas, pimentos and mushrooms and stir until thickened.
Add 1 cup cheese and stir until melted.
Drain potatoes, add together with vegetables into sauce and pour into casserole
Sprinkle the remaining cheese on top.
Bake at 350 F for 30 minutes.
