1 unbaked 9 inch pie shell
4 eggs
1/2 cup sugar
1/2 tsp salt
1 tsp vanilla extract
2 cups milk, scalded
Nutmeg

Directions:
Directions:
Partially bake the crust at 400º for 5 to 8 minutes. Remove from the oven and mash the bubbles in the crust down with the back of a spoon.

In a bowl combine the eggs, sugar, salt, and vanilla. Gradually stir in the scalded milk. Pour the filling into the pie shell.Sprinkle with grated nutmeg. Bake at 400º for 15 minutes. Reduce the oven temperature to 350º and continue baking for 15 to 20 minutes or until a knife inserted in the center comes out clean. Cool before serving.
