1 lb. oreos, ground in food processor
1 stick butter, melted
Filling:
3 - 8oz. pkg. cream cheese, softened
4 eggs
2/3 c. sugar
1 t. vanilla
12 oz. semi-sweet chocolate chips
14 oz. milk chocolate chips
14 oz. white chocolate chips

Directions:

Mix 2 cups of the Oreo crumbs with melted butter. Press into greased springform pan.
Mix together cream cheese, sugar and vanilla. Add eggs one at a time until well incorporated. Divide filling into 3 bowls.
Melt chocolate chips separately in microwave. Add semi-sweet chocolate to one bowl of cream cheese mixture, milk chocolate to another, and white chocolate to the other. Mix each chocolate cream cheese mixture well.
Gently layer on oreo crust:
1. Semi-sweet cream cheese layer
2. Oreo crumbs
3. Milk chocolate cream cheese layer
4. Oreo crumbs
5. White chocolate cream cheese layer
Wrap springform pan in aluminum foil. Bake in a water bath (half way up sides of the pan) at 300º for 1 hour. Remove from oven and let cool in water bath for 30 minutes. Refrigerate 12 hours to set.

I don't remember where I got this recipe, but it's a good one! You can serve it straight up, or with a raspberry or strawberry sauce.
