12 eggs
1/3 c. sour cream
1 lb. sausage, cooked, cut up (spicey Bob Evans)
1 onion, chopped
1/4 lb. mushrooms, fresh, sliced
1/2 lb. cheddar cheese, grated
1/2 lb. mozzarella cheese, grated
1/2 lb. swiss cheese, grated

Preheat oven to 400º.

Beat eggs & sour cream. Pour into a buttered 13X9 inch casserole. Bake at 400º for 10 minutes until eggs are set. This will be lumped up in spots.

Meanwhile, saute sausage, onions and mushrooms. Season with salt and pepper, drain fat. Spread meat mixture over eggs and top with the grated cheeses. Return dish to oven and bake at 325º for 30 minutes until cheese melts.

This can be made the night before. If made the night before, don’t start the final 30 minutes of baking until are ready to serve. Can also serve with salsa.
