Ingredients: 1/4 c. milk
1/2 c. margarine
1/2 c. tsp. grated lemon rind or a few drops of lemon juice
1 c. sour cream or plain yogurt
3 eggs
4 1/2 - 4 3/4 c. flour
2 pkg dry active yeast
1/2 c. sugar

Directions:Combine 1 cup flour, sugar and yeast.
Heat milk and Margery over low heat do not boil. Add to flour mixture and beat 2 minutes. At medium speed, add 1/2 cup flour, eggs, sour cream and lemon rind and beat 2 minutes. Gradually stir in flour to form a soft dough. Knead dough until smooth and elastic. Place in greased bowl; brush with melted butter (or spray with cooking oil). Cover and let rise until doubled in size (about 2 hours). Punch down; divide in 1/2. Roll out dough on floured surface and cut into desired shape for Kolaczki (I use a glass with a large opening to make round cookies) then add your filling (Solo makes great tasting fillings or you can use a cheesecake filling for cheese Kolaczki.) Bake at 375 º for 8 - 10 minutes or until golden on the bottom. Remove from cookie sheet to cooling racks. Sprinkle with confectioner's sugar. |

Notes: Remember that the filling will spread as it bakes so use very little filling until you see how it expands as it bakes. DO NOT EAT RIGHT OUT OF THE OVEN!!!
Let the Kolaczki cool completely because the sugar in the filling will be hotter in the middle and burn your mouth.
