3 eggs
1 c. oil
2 c. sugar (1 white - 1 brown)
2 c. grated zucchini
1 t. vanilla
3 c. sifted flour
1 t. salt
1 t. soda
2 t. cinnamon
1/4 t. baking powder
3/4 c. chopped nuts

Directions:
Directions:
Beat eggs until light and foamy. Add oil, sugar, zucchini and vanilla. Mix lightly, but well. Add flour, salt, soda, cinnamon and baking powder (sifted together). Mix until blended; add nuts. Pour into 2 greased 9x5 loaf pans. Bake at 325º for 1 hour when toothpick comes out clean. Set on rack 10 minutes. Remove from pans; cool on racks. Yield: 2 loaves.
