3 eggs
1 c. oil
2 c. sugar (1 white - 1 brown)
2 c. grated zucchini
1 t. vanilla
3 c. sifted flour
1 t. salt
1 t. soda
2 t. cinnamon
1/4 t. baking powder
3/4 c. chopped nuts

Beat eggs until light and foamy. Add oil, sugar, zucchini and vanilla. Mix lightly, but well. Add flour, salt, soda, cinnamon and baking powder (sifted together). Mix until blended; add nuts. Pour into 2 greased 9x5 loaf pans. Bake at 325 for 1 hour when toothpick comes out clean. Set on rack 10 minutes. Remove from pans; cool on racks. Yield: 2 loaves.
