1/4 cup margarine/butter
3 tbsp cocoa
1 tsp.instant coffee (optional)
3 tbsp. boiling water
1 1/2 to 2 cups icing sugar
1 tsp. vanilla

Directions:
Measure butter, cocoa and instant coffee into a plastic mixing bowl. Add boiling water and stir well to melt margarine and form a custard-like consistency. Add icing sugar and vanilla and blend well.

This is the icing I used for Danish Chocolate Cupcakes. All you need to do is dip the tip of the cupcake in, give it a swirl and pull it out. It saves a lot of mess and time. It may seem a little too soft to begin with, but it becomes firmer as it cools so don't add too much icing sugar.
