Crust:
1-1/2 C. Flour
2 Tbsp. Sugar
1/2 tsp. Salt
1/2 C. Vegetable Oil
1 Tbsp. Milk
Filling:
2 Tbsp. Cornstarch
1 C. Sugar
1 C. Water
3 Tbsp. Strawberry Jell-O powder
1 to 1-1/2 pints Strawberries, washed and hulled (leave whole)

Crust:
Mix all ingredients together. Press dough in bottom and sides of pie plate. Prick dough with fork. Bake at 350º for 15-18 minutes, or until dough is slightly browned. Cool.
Filling:
Mix cornstarch and sugar together in a saucepan, add water and stir to dissolve cornstarch and sugar. Continue to stir until mixture comes to a boil and is clear. Add Jell-O powder and stir until it is dissolved and well combined. Cool.
Arrange strawberries in cooled crust, add enough strawberries to fill crust. Pour cooled Jell-O mixture over the strawberries. Refrigerate until set.

I received this recipe from Sandy Posey, a Soccer Mom friend. The crust is similar to a sugar cookie crust. Don't forget a dollop of whipped cream or Cool Whip...Enjoy, enjoy, enjoy!
