1/4 c. oil

3 medium onions, sliced thin
3 large carrots, grated
2 medium green peppers, chopped
1/4 tsp. garlic powder

12 lbs. tomatoes, prepared and cut into pieces
1/4 c. brown sugar, packed
1 (12 oz.) can tomato paste
2 Tbsp. canning salt

1/2 tsp. black pepper
2 tsp. oregano
1 1/2 tsp. sweet basil

Directions:

Cook in oil, over medium heat: onions, carrots, green peppers, and garlic powder until onions are transparent.

Add tomatoes and remaining ingredients and cook on high until it comes to a boil. Reduce heat to a simmer and simmer, covered, for 2 hours, stirring occasionally. Then put in hot jars and seal.


This makes about 10 pints. You may want to cold pack in boiling water bath 5 minutes to insure preservation. (Follow standard canning directions.)
