1 frozen or refrigerated pie shell
4 eggs beaten
1/2 c. mayo
1/2 c. evaporated milk
2 T. flour
3/4 tsp. dry mustard
1/2 c. thinly sliced scallions
1 1/4 c. shredded cheese- cheddar,Swiss, hot pepper jack,or Italian mix
8 oz. cooked diced ham

Directions:
Preheat oven to 425º. Bake pie shell for 6 min. Remove from oven. Reduce heat to 325º.Mix beaten eggs,mayo,milk,flour,and mustard. Stir in scallions,cheeses and ham. Pour into pie shell. Bake at 325ºfor 50-60 minutes till set. Serve warm.
