one ripe banana
1 egg
1and 1/4 cups of milk
1/4 cup oil
1 packed cup of brown sugar
2 cups bran
1 and 1/2 cups of self rising flour
2 tbsp of protein powder optional but I use it to boost the protein for my vegetarian. It does not change the taste.
1 tsp nutmeg
add nuts or cranberries if desired

Directions:

Beat together first five ingredients. Add the bran and soak for five minutes. Stir in the flour and nutmeg. Add any desired additions. Butter a muffin tin and bake at 400º for 18-20 minutes.

Nonny can't make these fast enough for her grandchildren. They taste like dessert but she is slipping the fiber to those who are primarily sustained by McDonald's and white bread.
