3 eggs
2 carrots (cleaned and cut)
1 c. oil
1 c. flour
1 c. cornmeal
2 c. sugar (or 1/2 c. Splenda)
1 T. baking powder

Directions:
Directions:
In blender, mix eggs, carrots and oil. In a bowl, combine all the other ingredients and mix. Add the mixture from the blender into the bowl and stir it all up. Pour into a non-stick cake pan and bake at 375º for 30-45 min. Check if the cake is done by putting a toothpick in the center if it comes out clean, it's done.
