Pepper-Stuffed Pork Chops Recipe

1 T Butter Or Margarine
3/4 C Cornbread Stuffing Mix
2 T Water
4 Pork Loin rib chops 1 Inch Thick
1 ( 4 oz. ) can whole green chili peppers drained and seeded
1 (7 1/2 or 9 oz. ) container nacho cheese

In a small saucepan melt butter, stir in stuffing and water. Set aside
Trim excess fat from chops. Make a pocket in each chop by cutting from the fat side almost to the bone.
Place 1/4 chili pepper's in each chop, Spoon 1/4 of the stuffing mixture into each chop
Secure with wooden toothpick. Place chops on an Unheated rack of a broiler pan. Broil 5 in. from heat for 8 minutes.Turn broil 7 - 8 minutes more or until No Pink remains. Remove toothpicks and Cool slightly.
To serve without freezing: Prepare as above, except do not broil. Bake, covered, at 350 º for 45 minutes. Uncover; bake 25 to 30 minutes more or until the is No Pink. Top each chop with 3 T of cheese sauce return to oven for 3 to 5 minutes, until cheese melts
For later use. Place in a shallow individual casseroles. Top with 3 T cheese sauce. Seal, label and freeze for up to 3 to 6 month
To Serve:Pre Heat Oven 375º
Unwrap frozen chops Cover with foil, bake 60 to 65 minutes or until heated through

This is a good recipe to make in winter. It will help heat the house along with warming your in sides.
If making for guests make sure they like chills first.
This is also a good recipe for freezing ahead of time.
