Red, enchilada sauce
lettuce and tomatoes
eggs

Directions:
Directions:
Heat enchilada sauce. Grade Cheddar cheese, Chop onions, cut up lettuce and tomatoes very fine. Heat enchilada sauce. dip totillas in hot oil, just enough to soften. dip cooked tortilla in enchilada sauce, and place on a plate. Put cheese and onions on top of tortilla. Repeat. Each enchilada has 3 tortillas on it. When finished , fry an egg and place on top. Garnish with cheese, onions and more enchilada sauce. Put lettuce and tomatoes over the top and serve. .
