6 lbs. Pork Loin Roast (or Pork Tenderloin)
Salt to taste
Pepper to taste
1 tsp each of dried sage, thyme, rosemary,
marjoram (optional)
4 tart Apples (Granny Smith), peeled, cored,
cut into 1 " thick wedges
1 Red Onion, chopped
3 T. Brown Sugar (or more to taste)

Directions:
Directions:
Preheat oven to 325º
Place roast in a shallow roasting pan, rub in seasonings and bake for 1 to 1 1/2 hrs. Drain fat.
In a med bowl, mix apples & onion with br sugar.
Spoon around roast, and continue to cook for 1 hr more, or until meat thermometer is 160º.
Transfer to platter with apples and onion and keep warm while juices set.

After about 10 min, slice and serve.
