2 cups peeled and cubed eggplant
1/2 cup chopped onions
1/2 cup chopped celery
1/4 cup chopped bell pepper
1/4 cup butter
1/2 tsp salt
1/4 tsp pepper
1 cup chopped fresh tomatoes

Directions:
Directions:
Soak eggplant in salted water for 10 minutes. Saute onion, celery, and pepper in butter. Add salt, pepper and tomatoes. Drain on paper towel the eggplant and add to mixture. Cook covered for 20 to 25 minutes over medium heat.

I had to include at least one eggplant recipe. Grandaddy was the champion at producing eggplant in his garden. I did make this several times.
