2 eggs
2/3 c. sugar
3 ripe bananas, mashed
8 oz. applesauce
1/3 c. milk
1 T. vegetable oil
1 T. vanilla extract
1 3/4 c. flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/3 c. chopped walnuts or chocolate chips (optional)

Directions:
Directions:
Preheat oven to 325º. Spray loaf pan with non-stick spray and lightly dust with flour. In a large bowl, beat eggs and sugar until fluffy. Beat in bananas, applesauce, milk, oil and vanilla. Add flour, baking powder, baking soda and salt. Mix until blended, then fold in walnuts or chocolate chips. Put into loaf pan and bake until a toothpick inserted into the center comes out clean. Turn bread out onto a wire rack and cool.
