3-4 slices Bacon, chopped
1/2 C. Onion, finely chopped
1-1/2 Tbsp. minced Garlic
1/2 Tbsp. fresh Thyme, chopped
1 lb. Beef chuck, cut into 1 inch cubes
1 Tbsp. Worcestershire sauce
1/2 tsp. Kosher Salt
1/4 tsp. Black pepper
4 slices Cheddar cheese

Directions:

Cook bacon over medium heat until crispy.
Add onions to the pan and cook for 4-5 minutes, until soft. Add garlic and cook for another 1-2 minutes. Add Thyme to the pan and toss to combine, cool.
When bacon mixture is cool, pour over beef and drizzle with Worcestershire, salt, and pepper. Toss well to combine. Marinate covered in refrigerator for 1 hour.
Grind mixture in meat grinder. Form ground mixture into 4 patties and chill for 1 hour.
Grill patties until medium-well, place 1 slice of cheese on each patty. Serve on buns when cheese begins to melt.

You need a meat grinder for this recipe. Freshly home ground beef is worth the extra effort. The bacon and seasonings really make these special burgers.
