6 Potatoes (Russet or Idaho), boiled/peeled/cubed
2 stalks Celery, chopped
1/4 C. Green Pepper, chopped
1/4 C. Yellow Onion, chopped
4 Hard-boiled eggs, peeled/chopped
1 C. Mayonnaise (Hellmann or Blue Label)
1/4 C. Sweet Pickle Relish
3 tsp. prepared Mustard
1 tsp. dried Parsley flakes
1 tsp. Tony Chachere's Creole Original seasoning
Salt and Black Pepper to taste

Directions:
Directions:
Toss potatoes, celery, green pepper, onion and hard-boiled eggs together.
Combine mayonnaise, relish, mustard, parsley and Tony Chachere's until well blended.
Gently toss potato mixture with mayonnaise mixture until combined. Season with Salt and Pepper to taste.
Refrigerate a minimum of 4 hours before serving.
