1 (16 oz.) box long grain wild rice
3 lbs. boneless and/or skinless chicken breasts
1 (16 oz.) can whole cranberry sauce
3 tbsp. butter
1 tbsp. lemon juice
½ c. sliced blanched almonds
1½ tbsp. soy sauce

Directions:
Directions:
Heat oven to 350º Sprinkle rice evenly in a buttered glass 9x13 baking dish. Sprinkle contents of seasoning packet over rice and arrange chicken pieces on top of rice.

Combine cranberry sauce, butter, soy sauce, and lemon juice in a medium sauce pan. Heat over medium heat, stirring constantly, until sauce and butter are melted. Pour over chicken.

Bake, covered for 1 hour 10 minutes. Uncover, sprinkle with almonds and bake uncovered, 10 minutes, or until rice and chicken are tender.
