3 T Butter
1 C diced Carrots
1 C chopped Onion
3 C Water
3 Chicken Bouillon Cubes
4 C cubed Potatoes
2 C Milk
3/4 C shredded Gruyere Cheese
Salt and Pepper to taste
Chives for Garnish
1 1/2 C shredded Sharp White Cheddar

Directions:
Directions:
Melt butter in a pot. Add carrots and onion. Cover and cook on low for 25 minutes. Stir occasionally until tender. Add water, bouillon cubes and potatoes. Cook covered 20 to 30 minutes until potatoes are tender. Mash vegetables slightly. Add milk and cook until heated. Gradually add cheese and stir until melted. Add salt and pepper to taste and then garnish with chives.
