1 package hot pork sausage
12-15 uncooked jumbo pasta shells
2 medium onions, finely chopped
2 cloves garlic, finely chopped
2 eggs
2 cups ricotta cheese
1/2 teaspoon oregano
2 tablespoons parsley
3/4 cup parmesan cheese
1 jar spaghetti sauce

Preheat oven to 350º.

Cook shells according to package directions until just tender; rinse with cool water and set aside.

Cook sausage, onions, and garlic over medium high heat stirr frequently until meat is cooked.

Remove from heat and stir in beaten eggs, ricotta cheese, salt, oregano and parsley.

Fill each shell with mixture. Spoon 1/2 sauce in pan. Place filled shells in single layer and pour remaining sauce over shells.

Sprinkle with parmesan cheese. Cover and bake for 45 minutes.
