1 T. olive oil
1/2 cup minced carrot ( or chopped bell pepper)
1 cup chopped onion (about 1 medium)
1/2 cup chopped celery
2 cloves garlic, minced
salt
1 1/4 lbs. lean ground beef
1/2 cup ketchup
2 cups tomato sauce (or 1 - 15 ounce can whole tomatoes, pureed)
1 T. Worcestershire sauce
1 T. red wine vinegar
2 T. brown sugar
pinch ground cloves
1/2 t. dried thyme

Directions:
Directions:
Brown ground beef in olive oil in a Dutch oven. Add remaining ingredients and simmer until all vegetables are cooked - probably an hour.
