2 c. self-rising cornmeal
2 c. buttermilk
1 large egg
1 T. sugar
1/3 c. margarine

Directions:
Directions:
Stir together cornmeal, buttermilk, egg and sugar in a large bowl. Melt margarine in an 8 in. iron skillet in a 425º oven for 5 minutes. Remove the skillet from the oven and tilt it to coat evenly with margarine. Pour cornmeal batter into the skillet. Bake at 425º for 25 minutes or until golden brown. Remove cornbread immediately from skillet and enjoy.
