Ingredients: 1 lb. box pasta (elbows or rotini) 2 cans Campbell's Cheddar cheese soup 2 c. shredded cheese (mild Cheddar or Colby/Monterey blend) 1 large block of Velveeta, cubed 1 pint of half and half 1 sleeve of Ritz crackers, crushed to crumbs 2-3 T. butter or margarine

Directions:1. Preheat oven to 375º.
2. Cook and drain pasta according to directions.
3. Pour 1/2 cooked pasta into a large baking dish. Take one can of soup and spread it over the pasta. Sprinkle 1 c. of shredded cheese over soup. Place 1/2 of the Velveeta cubes on top of mixture. Repeat process for a second layer.
4. Pour whole pint of half and half over the top.
5. For topping, melt the butter and add the cracker crumbs. Set aside.
6. Cover baking dish with foil and bake for about 20-22 minutes. Remove dish from oven and stir well. Cover and cook for another 20-22 minutes. Remove foil and add the cracker topping. Cook for an additional 15 minutes uncovered. |
