12 eggs
1/3 C sour cream
1 lb sausage, cooked, cut up (I use spicey Bob Evans)
1 medium onion, chopped
¼ lb. fresh mushrooms, sliced
½ lb. cheddar cheese, grated
½ lb. mozzarella cheese, grated
½ lb. swiss cheese, grated
Salt and pepper

Directions:

Beat eggs & sour cream. Pour into a buttered 13X9 inch casserole. Bake at
400 degrees for 10 minutes until eggs are set. This will be lumped up in spots.

Saute sausage, onions and mushrooms. Season with salt and pepper, drain fat.
Spread mead mixture over eggs and top with the grated cheeses. Bake at 325
Degrees for 30 minutes until cheese melts.
This can be made the night before. If you do make it the night before, you don’t
