Brown rice or orzo, prepared
4 chicken breasts
8 slices ham
1 c. shredded sharp white cheddar
salt & pepper
flour, as needed
3 T. extra virgin olive oil
1 small onion, minced
2 c. pineapple, chopped
3 T. brown sugar
3 T. apple cider vinegar
3 T. soy sauce
1 c. tomato sauce
3 green onions, chopped (optional)

Preheat oven to 400. Prepare rice or orzo as directed.
Pound out chicken breasts to flatten. Place 2 slices of ham and small handful of cheese on top. Roll and secure with toothpicks. Season chicken rolls with salt & pepper, and lightly toss in flour. Place chicken in hot skillet with olive oil. Turn to brown each side. (I add a little chicken stock or water to de-glaze the pan). Finish cooking in oven about 15 minutes.
Pineapple BBQ Sauce:
Add 1 T. olive oil to medium saucepan. Add onion and pineapple and saute until soft. Add brown sugar, vinegar, soy sauce, and tomato sauce. Simmer until thickened. Stir green onions into rice (if you prefer), add chicken on top and pour bbq sauce all over.
