2 eggs
1 cup sugar
3/4 cup vegetable or canola oil
2 small jars carrot baby food
1 tsp. vanilla extract
1-1/4 cups flour
1 tsp. baking soda
1 tsp. cinnamon

FROSTING:
1/4 (1/2 stick) cup butter, room temp
3 oz. cream cheese, room temp
1 tsp. vanilla extract
1-1/2 cups powdered sugar

Mix together the eggs, sugar and oil. Beat well. Add carrots and vanilla. Mix dry ingredients together (I put the flour through a mesh strainer) and whisk to combine. Add dry ingredients to carrot mixture. Pour into a greased and floured 9"x13" cake pan and bake at 350º for 20-30 minutes. Cool completely before frosting.

Cream together the cream cheese, butter and vanilla until smooth. Add the powdered sugar and stir until the right consistency. Spread on cooled bars.
