2/3 cup vegetable or canola oil
1-3/4 cups sugar, divided
1 egg
1/4 molasses
2 cups flour
1/2 tsp. salt
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger

Directions:
Directions:
Combine oil and 1-1/4 cup of the sugar in a large mixing bowl; add egg and beat well. Stir in molasses. Combine flour, salt, soda, cinnamon and ginger. Add to molasses mixture and mix well.

Roll dough into 1" balls; roll each ball in remaining sugar. Place 2" apart on cookie sheet lined with parchment paper. Bake at 350º fir 10 to 12 minutes or until lightly browned. Remove and cool on wire rack.
