1/2 cup vegetable or canola oil
1-1/2 cup sugar
3 bananas
2 eggs
1-1/2 tsp. vanilla extract
2 cups flour
1 tsp. baking soda
1/2 cup half & half
1/2 tsp. white or cider vinegar
1/2 tsp. salt

Mix in order given. You do not have to mash the bananas, just use an electric mixer. I always put the flour through a mesh strainer when I add it to the wet ingredients.

When well combined, pour into greased mini-loaf pans and bake at 350º for about 45 minutes or until golden brown. They should bounce back when poked with a finger.

This is my original recipe, which won the Minnesota State Fair Blue Ribbon in 2003. No kidding! It works best in mini-loaf pans for texture.
