3 oz. cream cheese, room temperature
2-1/2 cups powdered sugar
Food coloring
Peppermint oil (a few drops will do)

Gradually add the powdered sugar to the softened cream cheese in a large bowl. Stir by hand, do not use a mixer. Add a few drops of the peppermint oil at a time.

When the desired minty-ness is achieved, separate the dough into two or three bowls. Add a few drops of food coloring to each bowl and stir until color is consistent.

Roll small bits of dough in sugar and press into molds. Layer on cookie sheets with wax paper between the layers.

I find that the traditional roses and leaves works best, but have used many different molds and colors for these. I also like to use Spearmint oil sometimes. This is Kay Harms' recipe.
