3 pounds red potatoes
1 bottle Tony Chachere's creole seasoning, reserve 1 tsp for dip

Dip:
2 cup Hellman's Light mayonnaise
1/2 small jar dill cubes
1 bunch green onions, chopped
1 tsp creole seasoning

Directions:
Directions:
Boil whole potatoes with skins on, in water to cover with 1 whole bottle creole seasoning. Boil only until firm--do not let them get mushy. Place in refrigerator overnight in same water to absorb seasoning. Mix all dip ingredients together and chill overnight if possible to allow flavors to marry. Quarter potatoes and place on platter and serve with dip.
