8 chicken breast (I cut mine up in smaller pieces or use chicken tenders)
1/4 C. flour
1/2 C. melted butter
1/4 lb. sliced mushrooms
2/3 C. evaporated milk
1-2 cans cream of chicken soup
1 1/2 C. grated cheese
1/2 tsp. salt
1/2 tsp. pepper
Paprika (optional)

Directions:
Coat chicken in flour. Place melted butter and chicken in 9 x 13 pan. Bake uncovered for 30 minutes at 425º. Turn chicken and bake until done, 20-30 minutes. (Cooking time will need to be adjusted by about half if tenders are used). Remove and pour off fat. Turn oven down at 325º. Top with mushrooms. Combine milk, soup, cheese, salt, pepper and paprika. Pour over chicken and mushrooms. Cover with foil and return to over for 20 minutes.
Serve with rice, veggies and rolls!
